Spinach

 
Popeye was RIGHT!!!  He knew about the power of SPINACH!  Spinach is loaded with nutrients and proves to be a mega powerhouse food!  It’s low in calories yet very high in vitamins, minerals and other phytonutrients.  This leafy green is an excellent source of vitamin K, vitamin A, magnesium, folate, manganese, iron, calcium, vitamin C, vitamin B2, potassium, and vitamin B6.  It’s a very good source of protein, phosphorus, vitamin E, zinc, dietary fiber, and copper. Plus, it’s a good source of selenium, niacin, and omega-3 fatty acids.  Can you believe that?!!  All in one food!!! 
 
Some of the health benefits of spinach include:
  • Maintains good eyesight
  • Lowers blood pressure
  • Strengthens muscles
  • Prevents age-related macular degeneration (AMD) and cataracts
  • Prevents atherosclerosis and heart attack 
  • Helps with bone mineralization
  • Has an anti-ulcerative, anti-cancerous property
  • Helps protect skin from damage
  • Contains folate which is crucial for fetal development and infant growth
 Spinach is also a great choice because it is available almost everywhere! This amazing super food is easy to find at your local store (it’s very affordable!) or can be easily grown in your backyard! Spinach is also very versatile! It can be eaten raw in a salad (and is much more nutritious than iceberg lettuce—try replacing half of your iceberg with spinach!) or a green smoothie. Or it can be cooked and eaten as a dish on its own or added to soups and other dishes.  Think your kids won’t ever touch the stuff?  Be creative!  The Sneaky Chef even stashes spinach in brownies!!!  Here are some ideas for adding a little spinach into your meals!

As you can see………GREEN IS GOOD!!!  And there are TONS of way you can eat spinach!  So do like Popeye and bust open a can today!
