Did you read that subject line and think: WHAT?! Bean cookies?!!! What is she talking about?! Several weeks ago I came across a healthy cookie recipe on a website called Eliza’s Edibles. The cookies are truly amazing. And they’re made from black beans. Yep. Crazy, huh? You honestly can NOT taste the black beans. They are delicious! Plus they are easy and quick to make! I call them Bean Cookies but they are really called Secretly Healthy Chocolate Brownie Cookies. Here is the recipe:
Ingredients
- 1 can no-salt-added black beans, rinsed well (I used Wild Oats Organic brand)
- 2 Tbsp. milk (You can use almond milk to make them dairy free)
- 1.5 Tbsp. peanut butter/nut butter of choice (I’ve made them with almond butter and peanut butter. The almond butter creates a better consistency in my opinion.)
- 2 Tbsp. olive oil
- 3 Tbsp. whole wheat flour (You can use gluten free rice flour to make them gluten free)
- ¼ cup unsweetened cocoa powder
- ½ cup + 1 T. sugar
- 1 tsp. baking powder
- 1 tsp. vanilla extract
- pinch of cinnamon
- pinch of salt
- ⅓ cup dark chocolate chips, plus more for sprinkling on top (The higher percentage of cacao, the better!)
Instructions
- Preheat oven to 375 and line a large baking sheet with parchment paper.
- Combine black beans, milk, peanut butter, and olive oil in a food processor and process until smooth.
- Add in whole wheat flour, cocoa powder, sugar, baking powder, vanilla, salt, and cinnamon, and continue processing until combined and mousse-like.
- Stir in ⅓ c. dark chocolate chips.
- Spoon 16 dollops evenly spaced dollops of the batter onto the baking sheet and sprinkle with the extra chocolate chips.
- Bake for 10 minutes.
- Let cool slightly, then put on a baking rack until they are cooled completely.

The cookies need to be stored in the refrigerator due to the black beans! I really hope you try these! They curb my sweet tooth and don’t leave me feeling guilty.
